Protein Banana Chocolate Chip Muffins – Vegan

What a beautiful warm weekend we had here. I really wish I could spend more of it outside, but with George and I both on call, other plans needed to happen and they did!

I will separate today’s posts. One for these protein packed muffins and another with how my running is going. I want to go into a little more detail on what is happening with the running as this is a health & fitness blog as well as a food blog. But some of you just want the food. And I understand, I rather just go straight to the food sometimes too! 😀

This recipe can be done in two or even three ways. The recipe below is for vegans and has protein in it. But if you are not down with the protein…you can omit it. You can also substitute the stevia for real sugar. It is all up to you! Baking with stevia is sweeter, so we use less in baking. I often tell people to add to taste. Ingredients: Yields 12 muffins

  • 1 cup whole wheat flour, 1 cup unbleached all purpose flour
  • 1 1/2 t baking soda
  • 1/2 t salt
  • 1/3 cup + 1 1/2T of Truvia or 1cup sugar
  • 1/3 cup canola oil
  • 4 very ripe bananas, mashed
  • 1/4 cup apple sauce (this keeps them moist)
  • 2 T water
  • 1 t vanilla extract
  • 1 cup non dairy semi-sweet chocolate chips
  • 1-2 scoops of vanilla protein (I used Sunwarrior), optional

Directions: Preheat oven to 350c. Line or lightly grease your muffin tin.  In medium bowl, mix the flour, salt, baking soda & protein powder.

In a large bowl,  beat the sugar and the oil. Add mashed banana and chocolate chips. Stir in water, vanilla extract and apple sauce. Add flour mixture and mix till combined.

Fill the muffin tin evenly, I use an ice cream scoop. And bake for 20-25min till  a toothpick inserted in the middle of a muffin comes out clear.

Black bananas make yummy muffins 😀

Add a glass of almond milk

Throw in a Tia and you have yourself an amazing healthy snack!

These will be my next batch of muffins! I tried some a week ago that used coconut flour and was impressed.
I use NuNaturals Stevia, but rarely use it in baking. Usually I use maple syrup or honey in baking.

I use maple syrup and honey a lot too. I have heard a lot about NuNaturals…I oddly have never had it. Do you order it online?

You know what I never thought to buy coconut milk, when I am pretty sure that is the reason i REALLY love the coconut almond breeze(which isn’t available here, I picked it up on our last trip to the states). But So Delicious coconut milk is!

I replaced canola oil with olive oil,used 1 c ap flour, 1 c coconut flour, 1 scoop arbonne protein powder,3/4 c choc chips. Had to add a cpl extra Tbsp water and a little more applesauce but they turned out great! Thanks for sharing 🙂
