Banana Chocolate Marble Loaf

I know I know two desert recipes in one week might be a overload. But I had some ripe bananas and was craving chocolate. Why not create a marble loaf and call it bliss. This recipe is vegan and extremely moist. I often use that when describing my cake type deserts, but it is important. I find people have this strange notion that vegan deserts might be dry as they don’t have eggs or milk. Which is the absolutely incorrect.

Ingredients:

  • 3 very ripe bananas, mashed
  • 2/3 cup of granulated sugar
  • 1 t vanilla extract
  • 2 T canola oil
  • 1/3 c almond milk
  • 1 c all-purpose flour
  • 1/2 c whole wheat flour
  • 3/4 t baking soda
  • 3/4 t sea salt
  • 3 T unsweetened cocoa powder
  • 6 T boiling water, divided
  • 1/2 c chopped walnuts
  • 2 T of ground flax seeds

Directions: pre heat oven to 350F, boil water and let simmer. In a large bowl mix mashed banana, sugar, canola oil, milk and vanilla.

Now add flour, baking soda, sea salt and flax seeds. Fold in walnuts. Scoop one cup of batter in a separate mixing bowl. In a small bowl mix coco powder and 3 tablespoons of the boiling water. Mix till the coco powder is dissolved. Add chocolate mixture to the one cup of banana and mix till combined.

Add the last 3 tablespoons to the original plain banana batter. Mix till incorporated.

In a lightly greased 8×4 loaf pan, alternate 1/2 cup of chocolate batter and banana batter. Once all the batter is layered, take a butter knife and swirl through the batter in a circular motion.

Bake for 30-40min till toothpick comes out clean. Let cool and serve.

I have been following BodyRock for sometime on Facebook & YouTube. I have tried the random workout once in awhile. And they have always been a sweaty mess. But I have decided to try this a little more intensely and try it for 30 days, 5 days week, two days off! And so far so good. I have been sore in all the right ways and looking forward to giving this a try some more. I don’t own any of the equipment they use in the videos, but may invest in the Sandbag. I do want to bring some weights into my workouts.

This post is a little delayed and I do apologize. But I will keep the wording from when I wrote it on Monday.

Hey friends.

It was a sad week last week, a women very close to my cousin and a wonderful lady that was always so warm and welcoming to my family passed away. She went peacefully, but it was still a sad loss. I have fond memories of her making my cousin and I apple pancakes and teaching me inappropriate words in German. My cousin lost her Oma, I lost a caregiver.  As I got older, I wasn’t in touch as often, but she was always so full of smiles when she did see me.  In memory of her, I woke up early Friday morning and made a healthy take on something that I always looked forward to when going to her house.  Apple Pancakes.

Ingredients: Yields 6 servings

  • 3/4 C whole wheat flour
  • 3/4 C whole wheat pastry flour(or use all purpose flour)
  • 2 t baking powder
  • 1.2 baking soda
  • 1/2 t of salt
  • 1 T honey
  • 2 large eggs
  • 2 C almond milk (or any other low fat milk)
  • 1 medium apple, cored and shredded

I used granny smith apples as she was everyone’s granny :)

Directions: Heat apple in a heat safe bowl, cover and place in microwave for 90 seconds till apples soffen. In a large bowl, whisk all dry ingredients. In a small bowl mix all wet ingredients. Slowly add wet ingredients to dry and mix till combined. Add apples and continue to mix till all combined. Heat skillet and pour 1/4c of batter, heat till bubbles appear and flip.

Something Oma always did was sift icing sugar on top

And heated pure maple syrup.

She may not have made it with whole wheat, but apple in pancakes will always remind me of her. I just added extra fiber :)

 

Now bring it back to today, it started off slow and rainy but now it’s sunny. Got quite a bit done..including editing those photos above. Just took me longer for some reason. When I am down I blast music and have a solo dance party in my kitchen. Yeah you heard me correctly, dance party in the kitchen. Music, dancing and the kitchen all my favorite things :) And I indeed did have a dance party when the sun came out! I asked George to join…

Guess he wasn’t interested in a dance party today? Maybe next time :)

Today’s workout was something new. It was by Bodyrock TV. I have been watching their videos on youtube for awhile. The idea of workouts at home can be quite appealing. Especially on the weekend..long weekend at that.  So I gave today’s a try. I don’t have a sandbag. But I used a 5kg bag of rice I bought for $7. I will need to make minor adjustments to the exercises as I actually don’t have any of the equipment. They also have adjustments for you as well. SO no big! I used my gymboss app on the iphone. Worked out perfect! I will probably keep these as an option for me in the future.

Well the house is looking quite in the need of some cleansing. Saturday night cleaning? Yeah, I rock it like that.
