Piña Colada Cupcakes – Vegan

This past weekend I celebrated my Moms birthday. She asked for nothing; seriously nothing…wait that is wrong she asked for placemats! How practical? and how boring!

In a need to stop the boring placemats birthday, I decided to make her a tropical birthday. She had leis, glow sticks, bonfire, mojito’s and……..Piña Colada Cupcakes! Now this recipe wasn’t something new to me, I had created these last December for my best friends birthday and always meant to share them with you…but I wanted to wait till I could display them in all their glory!

This recipe is a party in your mouth and the accessories that can be added is too much fun. I was jumping up and down in my kitchen with excitement. Oh and the funtastic fun part? I baked with alcohol (insert my baking with alcohol picture)

Ingredients: Yields 7-8 cupcakes

Adapted from Party Like a Vegan

  • 1 cup of all-purpose flour, sifted
  • 1/2 cup sugar
  • 1t  baking powder
  • 1/4 salt
  • 1/2 cup crush pineapple
  • 1t vanilla extract
  • 1/2 cup coconut milk
  • 2-3T coconut rum
  • 1/2t coconut extract

Directions: In a medium size bowl, blend pineapple and all wet ingredients ( I use a hand blender, but a food processor or blender would work great too). This step is really important, blend till everything is smooth, otherwise the cupcakes will get spongy from the pineapple. In a large bowl, sift all dry ingredients, mix in wet ingredients till all combined. Pour mixture into liners and bake for 18-20min till toothpick comes out clean.

Ingredients:

  • 1/4 cup of earth balance margarine
  • 1/4 vegetable shortening
  • 1 cup sifted icing sugar
  • 1/2t vanilla extract
  • 1/2t coconut extract
  • 1T coconut rum
  • 1/4 cup sweetened shredded coconut

Directions: Mix all ingredients together till smooth, pipe, sprinkle shredded coconut on top and make those cupcakes purdy!

Suggestions: Top with maraschino cherries, drink umbrellas, or slices of pineapple. Honestly these cupcakes look adorable and will be a sure hit at any party!

Irish Car Bomb Cupcakes – {Vegan}

I hope everyone had a great weekend. Mine as you will see over the next couple day’s was full of Irish flair and lot’s of Irish booze. I didn’t consume much (other than the required quality control testing) but I sure cooked/baked with it a lot.

I am so excited to share these recipes with you all. Let’s jump right into the desert. Skip dinner and get to the good stuff!  I’ll admit what is below isn’t the most healthy cupcake around. In fact it’s full of alcohol. But the truth is that I wish I could just take the day off work and eat them all…of course I won’t.They are probably the most elaborate cupcake I have made to date….but completely worth it. Has anyone ever heard of an Irish Car Bomb before? If you haven’t, according to Wikipedia : “An Irish Car Bomb is a beer cocktail that is drunk as a bomb shot, similar to a boilermaker. It is made with Irish stout, Irish cream, and Irish whiskey.” St. Patrick’s Day isn’t complete till you have an Irish Car Bomb, let’s just eat it instead of drinking it.

Cupcake Ingredients:

  • 1 cup Guinness stout
  • 2 cups all purpose flour
  • 1/2 cup dark coca powder
  • 1 1/2 t baking soda
  • 1t baking powder
  • 1 t salt
  • 1 1/4 c brown sugar
  • 2 t vanilla extract
  • 1 cup soymilk
  • 1 cup vegan butter (I used earth balance)
  • 1 t apple cider
  • 3/4 cup of coconut milk

Whiskey Ganache Filling:

  • 8 ounces bittersweet chocolate
  • 2/3 cup coconut milk
  • 2 T butter, at room temperature
  • 2 t Irish whiskey

‘Bailey’s’ Buttercream Frosting:

  • 4 cups icing sugar
  • 3/4 cup butter
  • 4-6 T of Bailey’s (I found this vegan recipe online that I used and recreated it)

Cupcake Directions: Preheat oven to 350, line cupcake pan. Bring butter and Guinness to a low simmer over medium heat in a saucepan. Add coca powder and whisk till smooth. Let it cool slightly. Whisk  flour, baking soda, baking powder, brown sugar and salt. Add the Guinness Coca mixture slowly.  Mix in all remaining ingredients and mix till smooth. Fill each cupcake liner till 3/4 full. Bake 15-17min or till toothpick comes out clear. Yield’s between 20-24.

Whiskey Ganache Filling Directions: Chop chocolate and put it into a heatproof bowl. Heat coconut milk  to a simmer (if the milk starts to boil it can splash so be careful). Pour milk over chocolate and let sit for one minute. Taking a spatula stir from the center outward till smooth. Add butter and whiskey and continue to stir till completely mixed and smooth.  Let it sit till cool and thick enough for pipping.

To fill the cupcakes I found this trick online, I took a large decorating tip and pushed it into the middle of my cupcake till 3/4 down and cut the center of the cupcake out. Fill each cupcake with Ganache filling,  let it cool and scrape the top off if any leaked out. I actually had trouble using a piping tube as I don’t think I let it cool enough(notice above my boldness to help all of you out), I ended up just filling each with a spoon. And that worked fine.

‘Bailey’s Buttercream Icing Directions: Whisk icing sugar and butter till smooth, add desired amount of Bailey’s to taste. Pipe each cupcake. I used a Wilton 4B.

These are a sure hit at any St. Patrick’s Day party you may have or be attending.  And not a single person will know they are vegan…unless you of course tell them.

Tonight is my fit test for Insanity. It has been a whole two weeks! So far so good. I am loving the sweaty mess I am after a workout. I did Cardio Abs this weekend and it made me burn!

P.S Mandatory Tia photo…she has made me promise at least once a week she will be a superstar. She had a rough weekend, it was vet appointment time. Poor girl has to go back on Wednesday and stay for awhile for some tests. She may have allergies or asthma. I am heart broken about it. :(
