No-Mayo Egg Salad Sandwich

I know it is Tuesday and what is below isn’t vegan. But I leave tomorrow and wanted to share this recipe with you before I go! It is honestly one of my favorite sandwiches. In fact I am eating it for lunch now! It is a fantastic healthy, high protein meal and tastes fantastic. *note to self, look in thesaurus for alternative adjectives* For now, fantastic will have to do! Mini Egg White Frittata

Sorry for the lateness in this post! I was having issues with my Lightroom application, but it’s all fixed now! Breakfast is my favorite meal of the day. That being said, during the week I usually will have either a breakfast cookie, toast with PB or overnight oats in a jar. I am not a morning person, I wish I was, but I’m not. Thank you everyone that sent me emails and comments about some personal matters that have recently struck us at home . My health is 100%, but my husband has been recently experiencing some things. Banana Chocolate Marble Loaf

I know I know two desert recipes in one week might be a overload. But I had some ripe bananas and was craving chocolate. Why not create a marble loaf and call it bliss. This recipe is vegan and extremely moist. I often use that when describing my cake type deserts, but it is important. Spinach Basil Spaghetti

One of the first things I cooked for myself when I moved out was spaghetti. The sauce came from a can, the spaghetti was white and I think I even threw in a can of sliced mushrooms.
