I have been feeling quite crummy these past few days. Yep! The Healthy Wife has been The Sick Wife. This being the reason for my lack of posts last week. It started as a sore throat and has become a runny nose, achy body and that oh so appreciated sore throat. Is it just me or does this happen to other people? I can be congested and successfully go on with my day(minus a box of Kleenex and a red nose), but once the sore throat comes…I am a gonner. Pack my bags and sign me up to my bed as I have checked in for an extended stay. I also really don’t like taking any cold/flu medication as it usually makes me feel all weird and gives me horrible dreams.
I had started Insanity last week. I had no choice but to push myself through those. It did feel good to do some exercise. Sweat out all the grossness. YUM
Food has been pretty basic, I am so grateful that I made this lentil soup earlier in the week. It has pretty much been my go to food for several days. And it is so good that I am not sick of it yet! It makes quite a few servings and is very filling.
Adapted from Everyday Maven
- 3 medium carrots, chopped
- 3 celery stalks, chopped
- 1 large yellow onion, chopped
- 1 medium sized sweet potatoes, peeled and cut into 1/2 inch pieces
- 4 garlic cloves, minced
- 1 large shallot, chopped
- 2 cups dry green lentils, rinsed
- 7 cups vegetable stock
- 1 16oz can of diced tomatoes (drained)
- 1 bay leaf
- 1 t dried thyme
- 1 bunch of kale, chopped
- 1 1/2 t of red wine vinegar
- kosher salt
- fresh ground pepper
- 1 t ground cumin
Directions: Put all ingredients but the kale and red wine vinegar into the crockpot, cook on high for 4 hours or low for 8 hours. When cooking time ends, add the kale and red wine vinegar for another 15min.
Tonight is the Cardio Power & Resistance Insanity workout. I really enjoy this one. They are slowly becoming a bit easier. This only being Day 1 of the second week, thing’s get jazzed up soon!!
