Healthy Oatmeal Raisin Cookies

How about we call this last Tuesday? This post is late, a week late. I have been studying for a work certification, football has returned AND I am trying to get in as much running as I can for my upcoming 5k. Life has been busy. But things are slowing down and I am spending my Sundays in the kitchen cooking up things for the blog again! If you recall, every Tuesday Courtney and I will be doing Vegan Tuesdays and this is my VERY first one.

George is obsessed with oatmeal raisin cookies. It is his number one requested cookie of any. And he didn’t let me get away with just first attempt as “the batch” for these. No, these have taken not two attempts, not three, but FOUR. My husband is quite the quality control enforcer hehe. I wanted to give him that cookie he loves so much, but with a side of healthy that he won’t even notice. Because just like he is the enforcer, I am the sneaky health ninja. (LOL can’t believe I just referred to myself as a ninja)  So go right ahead, dig in and enjoy one or even two. It wont hurt you at all!

Ingredients: Yields 2 Dozen

  • 1/2 c whole wheat flour
  • 1/2 c all-purpose flour
  • 1 c rolled oats
  • 1 t baking soda
  • 1/2 t sea salt
  • 1/2 t cinnamon
  • 2 T ground flax seeds
  • 1/2 c earth balance (or any other vegan butters)
  • 1/4 c granulated sugar
  • 1/2 c brown sugar, loosely packed
  • 1/2 c unsweetened applesauce
  • 1 t vanilla extract
  • 3/4 c raisins

Directions: pre-heat oven to 350 F. Cream together the earth balance, granulated sugar and brown sugars till light and fluffy in a stand or hand mixer. Add applesauce and vanilla till combined. Sift in the whole wheat and all-purpose flours, baking soda, sea salt, cinnamon and ground flax seeds. Add the rolled oats and mix well. Fold in the raisins. Using a cookie dough scoop or tablespoon roll cookie balls. Placing them on a slipmat or parchment paper. Lightly flatten the dough with the bottom of a floured cup. Bake for 10-12min till golden brown on the bottom. Allow to cool for 5 minutes before placing them on cookie cooling racks.

Super moist and chewy

The cookie can be healthy and I won’t mind that I will have two

And maybe I will dip it in some almond milk? (excuse my nails, I need to see the spa)

You read my mind… I was craving an oatmeal raisin cookie the other day! Now can you send me them? haha. My favorite is a chewy chocolate chip cookie.
We went to Banff for our first wedding anniversary to run a half marathon – fun times ;) This year we are going to Canmore but NO running! Maybe a hike and massages of course.
