Awhile back I heard about this dark green leafy wonder called kale. I always enjoy trying new vegetables, especially ones with through the roof health benefits. Kale is rich in calcium, vitamin C, A, E and K, and tons of beta-carotene. Loaded with fiber, kale is a superior vegetable by any scale.
How could I not go right out and purchase some? I am not sure what I had expected it to taste like, but for some reason I thought it would be like spinach. It is a bit bitter and a tougher leaf. So the possibilities are endless. The first time I had it steamed, the second time I steamed it with lemon juice and sea salt-delish. Then with more research I found what the foodie blog world have been raging all about……..kale chips. Fireworks shot off in my head, life became clearer and my opinion of this wonder vegetable steamed rolled right to the top of my all time favorite vegetables.
Fast forward to last night another brainstorm in the kitchen and the results…this.
Cheezy Kale Chips
Ingredients:
- 1 bunch of kale, washed, dried, stems removed and torn into medium sized pieces
- 1C cashews(soaked in water for 1-2 hours)
- 2 T + 1t of nutritional yeast
- 2 T lemon juice
- 2 T diced cilantro
- 3 T diced red onion
- 2 t kosher salt
Directions:Preheat dehydrator to 115c. Place all ingredients but kale in food processor and blend till smooth. Mix sauce with kale. I find using my hands is the best way to do this. Place kale on dehydrator trays. Dehydrate for 8-12hours till krispy. Enjoy
Oven method: Preheat oven at 350c. Bake for 8-10min. Keep oven door ajar. Watch the kale as it can darken quickly via oven method.

I need to try and make kale chips again, my first attempt did not go over to well…
I grew kale this past summer in our garden and we just steamed it as a side and loved it served with sea salt.
I love Kale Chips and make them all the time. I have yet to put Nutritional Yeast on them (even though I LOVE it!). You’ve inspired me to finally make some Cheezey Kale Chips
