Look at me? Mrs. Poster this weekend! Must be a record for how many recipes I have pushed out this weekend. My long weekend has been pretty much spent in the kitchen. We are going to Minneapolis, MN next weekend for my husbands birthday and he was on call this weekend, so we kept it rather low key. Which was fine with me! Look what I got done!!
This is a rather special post, recently a NEW local blogger friend Courtney from The Fig Tree Blog invited me to join in a virtual potluck. How nifty blogging and the internet are! I was extremely excited to join. Even more so to meet more lovely blogger friends. I never realize how much blogging would change my life, I have met so many amazing people both locally and all over the globe. And Courtney is truly one special lady. She is a vegetarian, beautiful photographer and just one of those people that you love right away. This potluck only had one rule; that it needed to be a vegan or vegetarian dish…easy done! I decided to bring a quinoa salad. Quinoa is a superfood, full of 8 amino acids, gluten free and full of protein. Perfect! Let’s get started
Ingredients: Yields 8 servings
Recipe adapted from Two peas and their Pod
- 2 cups vegetable broth
- 1 cup quinoa, rinsed in cold water
- 2T EVOO
- 1 clove of garlic, minced
- 2T freshly squeezed lime juice
- 1t lime zest
- 1/2 cup of black beans(can is okay just rinse them)
- 1/2 cup tomatoes, diced
- 1/4 cup cilantro, chopped
- half a packet of stevia or 1/4t of white sugar
- salt & pepper to taste
Directions: In a small bowl, mix together evoo, garlic, lime juice, lime zest, stevia and salt & pepper. Put aside. In a large pot, add quinoa to boiling vegetable broth, stir, turn heat down to low, cover and let quinoa cook for about 20min. Once cooked, fluff quino with a fork and place in a medium size bowl.
Add lime dressing, black beans, cilantro and tomatoes. Mix. I like this cold, but can also serve warm.

What a neat idea! I would totally do one. I love breakfast foods so I would probably bring a breakfast dish. Love quinoa salads in the summer, so easy to pre-cook quinoa and use it throughout the week is salads and then grill up meat or whatever.

Great addition to the potluck! I love quinoa/black bean salads, and yours sounds so good! Especially love the lime and cilantro in it.
I love the black beans with quinoa and this gorgeous salad! Most of the non virtual potlucks for me are usually indian food:) and very few people like salads with it. so i usually take a cooked main dish or a baked dessert.

I love quinoa salads, especially when they have lots of great flavours mixed in like this one! This sounds perfect for a potluck, especially since you can eat it warm or cold. And I love how you used the word nifty haha…I’m glad I found your blog through this event
