Red Cabbage Slaw

Is it just me? No matter how much sleep you get, how calm or even how busy work is, when you come home on Monday’s you are zonked? That is me today, and I am thanking smart Destini yesterday for prepping and getting my dinner ready last night. Tonight we had Epicures Pulled Pork recipe, but I use chicken instead of the suggested pork. Got that ready in the slow cooker and then went right into this colourful light red cabbage slaw! Due to everything I stated above, this post will be short, sweet and right to the point! This will be great for any potluck or BBQ.

Ingredients: Yields: 12 servings

  • 2 cups shredded red cabbage (did this in food processor with the slicing blade)
  • 2 large shredded carrots (I did this in the food processor)
  • 1 green onion, chopped
  • 1/4 cup of agave nectar or honey
  • 3T cilantro, chopped
  • 1t sea salt
  • juice from half of a fresh squeezed lime
  • pinch of smoked paprika or cayenne

Directions: In a small bowl, mix agave nectar, cilantro, seat salt, smoked paprika and put aside. In my food processor I use the slicing disc and slice the cabbage, carrots and put in a large bowl, add remaining ingredients. Stir in dressing and refrigerate for at least two hours. I find it tastes best if made the night before.

George suggests you put the slaw on-top of the pulled chicken and he promises it tastes amazing

I find myself just eating a bowl of this just as it is.

So colourful!

Who knew slaw could look so pretty, be healthy and taste wonderful.

Question: Are you watching Big Brother this season? To my Canadian friends, did you see they are having a Big Brother Canada in 2013? Would audition for it? I told George I was going to!(which I really wont) but they can never say no to a ridiculous red head!

Love BB! Not sure I would audition but we want my little bro to! That would be so cool if you did! I could not believe Sunday’s episode. Crazy!

Woo! Love Big Brother! 🙂 I’d be too nervous to try out. I’m too much of a softie. I’d be eaten alive in the Big Brother house! LOL. Love watching it on TV though! What do you think of this season so far?
