Red Velvet Cupcakes – {Vegan}

Today was a typical Monday. Nothing special happened really. This is a short week as I am going to Quebec Thursday.  A coworker is on holiday’s this week so I am working later. It put’s my whole body through a whirl of difference. I try to eat my meals the same time as usual, but just being at work later isn’t very enjoyable. George picked up dinner so I could come home and eat close to my normal time. That’s what husbands are for!  The rest of the week will be crockpot special! Though Thursday through Monday he will have to fend for himself. Is it weird that I am concerned about what he will eat? He is an adult! He should be able to take care of himself. Tomorrow is Valentines Day, we have a Jet’s game and I can’t think of a better way to spend the day then to see our team play(and hopefully win).

I know everyone is doing red velvet everything, but I can’t make it past Valentine’s Day without doing my share. There is just something about red velvet that I absolutely love and couldn’t help myself when it came to these. They are just so pretty. And it was also my wedding cake so it holds a special spot in my heart(sappy I know).

Ingredients:

  • 1 C  soymilk
  • 1t apple cider vinegar
  • 1 1/4 C flour
  • 1 C sugar
  • 2T cocoa
  • 1/2t baking powder
  • 1/2t baking soda
  • 1/2t salt
  • 1/3 C canola oil
  • 1T red food coloring
  • 2t vanilla extract

Directions: Preheat oven to 350F. In a bowl, combine the soymilk and vinegar and set aside. In another bowl mix the flour, sugar, cocoa, baking soda, baking powder and salt. Add the oil, food coloring and extract to soymilk. Mix the dry ingredients into the wet. Mix till lumps disappear. Pour into liners and bake for 15-18min or till toothpick pulls out clean.

Cream ‘Cheeze’ Frosting

  • 1/4C vegan margarine(I used earth balance)
  • 1/4C vegan cream cheese(I used tofutti)
  • 2C sifted icing sugar
  • 1t vanilla

Cream together all ingredients till smooth, pipe and decorate cupcakes. I used wilton 1M.

Aren’t they so pretty? Well they taste even better! So moist and so perfect!! Enjoy!!

These are aazimng! So pretty too! Love the color! I am full fledged American, but I have never really had Red Velvet cake before! Want to try these!
