Sweet Potato Chili – A Winnipeger getting soft skin

Hope everyone had a wonderful Easter, hopefully not too full of sugar. Didn’t have much over here. We went to my my sister-in-laws for Easter lunch. Kept it pretty easy. It has been slightly colder as of late…I know its only April and I live in Winnipeg. We just have been very spoiled and I think I let it get to me.

I have seen many versions of this type of recipe. This is a mixture of all the things I loved from them. It’s wonderful and the perfect thing to warm me up on these slightly colder days.

Ingredients: Yields: 6 Servings

  • 1 cup vegetable stock
  • 13 oz can of pinto beans
  • 13 oz can of black beans
  • 20oz peeled, sweet potatoes and cut into 1inch cubed
  • 2 cans of Ro-Tel diced tomatoes with green chilies or use 28oz can of diced tomatoes and 1/4 cup diced green chilies
  • 1lg onion, diced
  • 1/2 cup zucchini, diced
  • 1/4 cup green pepper
  • 1.5T chili powder
  • 1t cumin
  • 1t orange zest

Directions: Put all ingredients in slow cooker and cook on low for 4hours. Or cook in one large pot till sweet potatoes are soft.

I know this is very fall feeling, but I will eat this all year round till my stomach can’t handle anymore.

YUMMMMMM, the spice from the green chili’s is just so inviting.

Now onto some new to me and new new to me items. I have been trying to focus a lot on the photos I share with you on the blog. One of the many tricks I learned for dressing up the food is shopping  at thrift stores and getting some lovely old but pretty pieces. I got all this for under $5!! I feel like I won at my first thrift store shopping.

A little dirty, but nothing the dishwasher can’t fix.

Now onto my new new to me items. I had a gift card from my bridal shower(yeah that was almost a year ago) that I had not used for the most amazing little kitchen store called The Happy Cooker.  I originally was going to use it towards a le creuset dutch oven….and I am still going to get one. Just not at this very second. So instead I picked up some items that I just fell in love with and actually needed.

Aren’t those colours just amazing? LOOOVE them.

Not much happening here tonight, husband works late so I think I will relax, watch some of my horrible reality tv and maybe enjoy a glass of vino. Just one of those days.

I love sweet potato chili! I did not make it enough this fall and winter but am planning on making a batch next week before I am turned off it for the summer.
I never have patience in thrift shops but am envious of people who do and find cute things. I am also horrible at food styling or using cute props…

I love thrifting! I actually bought what looks like the exact same white plate you bought a few months back. *HAH* I have a ton of thrift shops in my neighbourhood, so I try and check them out once a week for props for food photography :)

This chili looks fantastic! The perfect recipe for these chill spring days. Where the heck did our warm weather go, hey!?

Sweet finds girl! I love shopping in antique and thrift shops…they’ve got great stuff there. I adore anything vintage so I even check out garage sales at the lake for that one hidden gem ;)

Great chili recipe too, a definite must try! Hope you had a lovely Easter and love the red hair…saw it on IG I think ;) x
