The Black Bean Burger & A Giveaway!

Hey Peeps! (I wanted to spice things up on my greetings) How was everyone’s week? Is anyone as happy as I am to know that this week is short? I can sing and lul all day long knowing I will be spending my weekend in my lulus cleaning my bathroom! Does it make me insane that I am actually looking forward to cleaning the bathroom on my long weekend? Yeah, I am probably a little insane. I take a ton of photos, all the time and they never make it up on here. So for weekend posts I will do it in photos. I know, we all do it. But I will force you all to endure my weekend photo posts. Love it my peeps. LOL

As you all know I am all about making feel good comfort food without sacrificing on nutrition.  We all should be able to enjoy the things we love to eat and feel good about it. I have stressed before about diets and how they have an expiration date. Being healthy isn’t about counting calories or stressing about the food you enjoy. Being healthy is about bringing the highest nutrients and healthiest food to your stomach with joy.  Now lets talk about what I am about to show you…my favorite black bean burger. I love veggie burgers, and this one is a must in our house. In fact this is the third time in the past 4 weeks I have made it.  So let’s dive in like you would with any burger.

Ingredients:

  • 1/2 cup chopped onions
  • 1/2 cup chopped carrots
  • 1/2 cup red peppers, chopped
  • 1/2 cup chopped mushrooms
  • 3 cloves garlic, minced
  • 1/4 cup spicy ketchup(could also use regular ketchup, try a drop of tabasco sauce)
  • 1T dijon mustard
  • 1T ground cumin
  • 1T chili powder
  • 1 16oz can of black beans
  • 1/2 cup panko bread crumbs

Directions: Preheat oven to 410. Heat olive oil on a skillet for a moment, add all vegetables and continue to saute for several minutes. Add all spices and continue to cook for a min. Remove from heat and let sit.

In food processor mix bread crumbs, black beans and vegetables. Process till mixed. Make 6 patties and place on parchment paper on a baking pan. They will be quite soft, so form them the best you can. Bake for 15min.

Suggested toppings : green leaf lettuce, avocado, tomato, ketchup. You name it! I LOVE avocado on them. Also with left overs I recently crumbled a patty on some field greens, grape tomatoes, shredded carrots and avocado.  Poured some Goddess dressing and now I have created my favorite salad. WOW I just keep winning with these beauties.

I am still working hard on switching to a higher plant based diet, in fact I am almost at two weeks and haven’t had any meat. Today I will introduce salmon just to see how my stomach acts. It will be an experiment.  Here are some thing’s I have noticed in the past two weeks.

  1. I felt bloated at first, not sure if it was because of the extra carbs(good ones) or the different feeling of food in my stomach, but I felt bloated for about a week. That has since gone
  2. My skin broke out in a way that it has NEVER before. I have read this can happen as its toxins from meat/dairy leaving my body. It is in the process of recovering now. But It is still quite bad.
  3. I felt like my immune system was going through havoc the first week. I never ate a lot of red meat, maybe once a month….honestly. And I never ate really fatty meats, always lean chicken, turkey and salmon.

Along with this journey I have been reading a lot of books and blogs about how others feel and food they eat. I happened to stumble across this ebook that was just released April 1st called Eat Awesome by Paul Jarvis.  It is absolutely wonderful. I haven’t yet made any recipes…but I will be this weekend. Tonight I have a coworkers leaving party. I will have a cocktail or two(don’t judge it’s the long weekend) and than a weekend of cleaning and possibly a new kale recipe, chickpea and my take at some almost healthy hot cross buns. A girl can dream can’t she?

Cherry Almond Butter – {Recipe}

If you haven’t noticed, I obsess over a lot of types of food.  In fact you would think I have an obsessive personality. Which I may or may not have.  Now I know all us bloggers have squeezed out every bit of almond butter recipes known to man. But couldn’t we all use one more? I know almond butter is a MUST have in my cupboard. It goes as quickly as it comes. I had some dried cherries in the cupboard and thought “well I really love cherries and almond butter in my smoothies, so why not save a step and mix them together?” Well I did just that and now I am left in a cherry almond butter lalaland

Ingredients:

  • 1.5 cups almonds
  • 1/4 cup dried cherries
  • 1t vanilla extract
  • 1t cinnamon
  • 1/4t salt
  • 2t pure maple syrup (optional)

Directions: Preheat oven to 325c and roast almonds in pan for 15min. Stand and let them cool.

Once cooled put into food processor for about 5-10 min. You will have to stop a few times in between and scrape the edges down. Add cherries and blend. Now add all remaining ingredients till smooth and blended. Fill jars and keep in refrigerator.

I don’t see this stuff lasting very long if your household is anything like mine! Hope you enjoy it as much as I do :)

Today was Pure Cardio of Insanity. I still have a pretty bad cold and today felt quite harder than the last time I did it. But I pushed through and did the best I could anyways.

Question: Have you made almond butter before? What is your favorite kind? If not, what is your favorite kind to purchase? I really enjoy Justin’s Maple Almond Butter. Hmmm maybe that will be the next almond butter I make up…can never have too much :)
