Left over chili? Let’s make breakfast!

Hey Everyone!!

How was everyone’s weekend? Our local movie theater is playing classic movies that we vote on via Facebook every month! How awesome is that? Best part? They are only $6 each. I honestly don’t remember the last time I spent $6 on a movie at the theater that wasn’t the cheap theater. My husband is obsessed with The Big Lebowski. He only just recently saw it and always quotes it. So when he heard that the theater was showing it….we had to go! I hadn’t seen this for years so it was fun to see it again. Funny note- as I write this, I hear him saying quotes from the movie to a buddy of his, Yep I am doomed to live with quotes from the dude forever.

Tonight was Super Bowl, as any of you know….I am a Packers fan. So this was hard to watch. All I could think about was that “this should be the Packers”. I am a disgruntled fan. But I will live. However, one of my favorite part’s of Super Bowl is the food. I made chili(this year turkey), sweet potato wedges and dip. Plus a bag of Popchips. But as always…..I have leftovers. I probably have enough chili for a small army! Sure my husband can take it to work for lunch for the next week or lifetime…….but why not make this fun?

My husband told me this morning as he awake to the smell of chili slowly cooking in the crockpot that he would like to eat chili eggs for breakfast. So what did he get? Exactly that.

Mexican Chili Eggs Casserole

preheat oven to 350c

This is super easy, take the left over chili you have and spoon a couple ladle’s worth of chili on the bottom of a oven safe casserole dish. Make small indents in the chili and crack eggs on-top of each. Bake covered in oven for 8-10minutes or till egg yolk is slightly white(or more depending on how you like you eggs). Serve with avocado and fresh cilantro.

My husband had his on-top of toast with shredded soy cheese on top. I was informed that we should have “Super Bowl’s” every month so he can have this for breakfast. I suppose we will be having chili much more.

Last minute Super Bowl snack!

With Super Bowl tomorrow we all need awesome snacks. But snacks shouldn’t be given the bad name of unhealthy. This is not just a Super Bowl snack, but a anytime you want snack. It is healthy and full of so much flavour you will be wanting it all the time. A snack that is healthy? How is that possible? Well let me show you! Sweet potatoes + fat free greek yogurt dip…..yep I hope you get the idea.

Sweet Potato Wedges and Chili Dip

Yield: 4-8 servings

Ingredients:

  • 2 medium sized sweet potatoes cut into 1inch wedges
  • 2tbsp EVOO
  • 1tsp paprika
  • 1tsp sea salt (I use Epicures sea salt, garlic salt & chili peper grinder)

Directions:

Preheat oven to 400c. Toss sweet potatoes with ingredients and bake for 25-30 minutes or until slightly crispy , tossing half way.

Chili Greek Dip

Ingredients:

  • 1 and 1/4cup greek yogurt(I use the PC fat free plain greek yogurt)
  • 2tbsp sweet chili sauce
  • 2tbsp chopped red onion(finely)
  • 1tbsp chopped cilantro
  • 1.5 tbsp chili powder

Directions:

Mix all ingredients together and serve.

Now onto the funny life thus be mine…..as I was trying to take photos for this post my lovely kitty photobomed me…..again.

Super Bowl Insanity

This past Sunday was of course the Super Bowl. Now in my house this is HUGE! Even more so since my fiancés favorite team is the Green Bay Packers! As tradition would dictate I would be making Chili and other snack foods for a bunch of football fans. Normally I would be making a very healthy dish of chili if this was a normal day.
