Piña Colada Cupcakes – Vegan

This past weekend I celebrated my Moms birthday. She asked for nothing; seriously nothing…wait that is wrong she asked for placemats! How practical? and how boring!

In a need to stop the boring placemats birthday, I decided to make her a tropical birthday. She had leis, glow sticks, bonfire, mojito’s and……..Piña Colada Cupcakes! Now this recipe wasn’t something new to me, I had created these last December for my best friends birthday and always meant to share them with you…but I wanted to wait till I could display them in all their glory!

This recipe is a party in your mouth and the accessories that can be added is too much fun. I was jumping up and down in my kitchen with excitement. Oh and the funtastic fun part? I baked with alcohol (insert my baking with alcohol picture)

Ingredients: Yields 7-8 cupcakes

Adapted from Party Like a Vegan

  • 1 cup of all-purpose flour, sifted
  • 1/2 cup sugar
  • 1t  baking powder
  • 1/4 salt
  • 1/2 cup crush pineapple
  • 1t vanilla extract
  • 1/2 cup coconut milk
  • 2-3T coconut rum
  • 1/2t coconut extract

Directions: In a medium size bowl, blend pineapple and all wet ingredients ( I use a hand blender, but a food processor or blender would work great too). This step is really important, blend till everything is smooth, otherwise the cupcakes will get spongy from the pineapple. In a large bowl, sift all dry ingredients, mix in wet ingredients till all combined. Pour mixture into liners and bake for 18-20min till toothpick comes out clean.

Ingredients:

  • 1/4 cup of earth balance margarine
  • 1/4 vegetable shortening
  • 1 cup sifted icing sugar
  • 1/2t vanilla extract
  • 1/2t coconut extract
  • 1T coconut rum
  • 1/4 cup sweetened shredded coconut

Directions: Mix all ingredients together till smooth, pipe, sprinkle shredded coconut on top and make those cupcakes purdy!

Suggestions: Top with maraschino cherries, drink umbrellas, or slices of pineapple. Honestly these cupcakes look adorable and will be a sure hit at any party!

Yes, I agree…moms sometimes ask for the weirdest things. And they give out the weirdest presents too. Come to think of it, the gifts they have are those you do not have any thoughts of buying but you need anyways 😉
