Whole Wheat Apple Pancakes – In Memory of a lovely lady

This post is a little delayed and I do apologize. But I will keep the wording from when I wrote it on Monday.

Hey friends.

It was a sad week last week, a women very close to my cousin and a wonderful lady that was always so warm and welcoming to my family passed away. She went peacefully, but it was still a sad loss. I have fond memories of her making my cousin and I apple pancakes and teaching me inappropriate words in German. My cousin lost her Oma, I lost a caregiver.  As I got older, I wasn’t in touch as often, but she was always so full of smiles when she did see me.  In memory of her, I woke up early Friday morning and made a healthy take on something that I always looked forward to when going to her house.  Apple Pancakes.

Ingredients: Yields 6 servings

  • 3/4 C whole wheat flour
  • 3/4 C whole wheat pastry flour(or use all purpose flour)
  • 2 t baking powder
  • 1.2 baking soda
  • 1/2 t of salt
  • 1 T honey
  • 2 large eggs
  • 2 C almond milk (or any other low fat milk)
  • 1 medium apple, cored and shredded

I used granny smith apples as she was everyone’s granny 🙂

Directions: Heat apple in a heat safe bowl, cover and place in microwave for 90 seconds till apples soffen. In a large bowl, whisk all dry ingredients. In a small bowl mix all wet ingredients. Slowly add wet ingredients to dry and mix till combined. Add apples and continue to mix till all combined. Heat skillet and pour 1/4c of batter, heat till bubbles appear and flip.

Something Oma always did was sift icing sugar on top

And heated pure maple syrup.

She may not have made it with whole wheat, but apple in pancakes will always remind me of her. I just added extra fiber 🙂


Now bring it back to today, it started off slow and rainy but now it’s sunny. Got quite a bit done..including editing those photos above. Just took me longer for some reason. When I am down I blast music and have a solo dance party in my kitchen. Yeah you heard me correctly, dance party in the kitchen. Music, dancing and the kitchen all my favorite things 🙂 And I indeed did have a dance party when the sun came out! I asked George to join…

Guess he wasn’t interested in a dance party today? Maybe next time 🙂

Today’s workout was something new. It was by Bodyrock TV. I have been watching their videos on youtube for awhile. The idea of workouts at home can be quite appealing. Especially on the weekend..long weekend at that.  So I gave today’s a try. I don’t have a sandbag. But I used a 5kg bag of rice I bought for $7. I will need to make minor adjustments to the exercises as I actually don’t have any of the equipment. They also have adjustments for you as well. SO no big! I used my gymboss app on the iphone. Worked out perfect! I will probably keep these as an option for me in the future.

Well the house is looking quite in the need of some cleansing. Saturday night cleaning? Yeah, I rock it like that.

Rosemary Hash browns – Healthy can be my bliss

One of my favorite meals of the day is breakfast. Craziest part is that during the week I often have some oatmeal, cereal or something that can be quickly made. I wake up at the very last moment every morning, roll outta bed and try to get ready as quickly as possible. I wish I could slow it down, but mornings must not be in my genes. Because this girl just can’t do it! That being said, making breakfast on the weekends is something my husband looks forward to. So much so that he will starve himself till I make it! How crazy is he? And how unhealthy is that? He always has some crazy ideas for breakfast and asks me to create them for the “blog”(I personally believe it’s his way of trying to convince me….sneaky men!). I think I may start featuring some of the ridiculousness real soon.

These are a wonderful homemade hash brown with one of my favorite spices; rosemary. The way fresh herbs fill a room when being diced is so wonderful or the way dried spices mix with a lovely baked meal relax me and put me in a place of bliss. Yeah cooking does that for me! These are simple, yet delicious. And that is a-okay for me.

Ingredients: Yields 4 servings

  • 2lb small yellow potatoes cut in halves
  • 1T dried rosemary
  • 1t seat salt
  • 2T EVOO

Directions: Preheat oven to 375c, toss all ingredients and place on baking pan. Bake for 25min or till potatoes are cooked and slightly browned.

That’s it! I promise the simplicity of them is a whole lot of YESSSS in the tummy area 🙂

Being healthy is always something I strive to do. Though when I get busy I find my gym visits can get down to once a week and my ridiculous brain will start finding aspects of myself that I dislike. I tell myself not to think like that, but not everyone can be 100% positive all the time. And honestly I am okay with that. I am human living in a rough world. So my goal for this week is to not find silly things to bring me down! Being healthy and happy is all a girl can ask for? Well that and shoes. Shoes always make my feet me happy 🙂

I did however make it to the gym today, will tomorrow and sneak one in either Friday or Sunday…Saturday is reserved for the Winnipeg Wine Festival! Every year I take my mom for Mothers day, we taste wines from all around the world and get giddy. Perfect Saturday afternoon. Back to the gym workout today, this is actually a repeat from last week(I try to do each workout session twice but try and lift heaver weights). It was a back and biceps day.

Really enjoyed this workout. Some of you may recognize it from Jamie Eason’s Livefit workout plan. And you would be correct! I am just taking the day to day plans. It has been wonderful so far. And very focused.

Hey Everyone!! How was everyone’s weekend? Our local movie theater is playing classic movies that we vote on via Facebook every month! How awesome is that? Best part? They are only $6 each. I honestly don’t remember the last time I spent $6 on a movie at the theater that wasn’t the cheap theater. My husband is obsessed with The Big Lebowski. He only just recently saw it and always quotes it. So when he heard that the theater was showing it….we had to go! I hadn’t seen this for years so it was fun to see it again. How is everyone’s weekend so far? Mine has been great! This morning the fiance made me breakfast!!! He has made me scrambled eggs in the past(once) with not much success and french toast. But somehow made over easy eggs PERFECT. I think there is a conspiracy here. Free Range Vita Eggs, Turkey Bacon, Roasted Rosemary Hash Browns and Whole Wheat Bread with Organic Kicking Horse Coffee. DELISH! Last night I went to see the last Harry Potter movie. I LOVE Harry Potter. In fact though I knew the ending……I still teared up. Yeah I am that much of a nerd. Yummy Frittata

Breakfast has to be my favorite meal of the day. I love it! It is also a very important meal of the day. Eating a proper breakfast will help with snacking and being hungry later in the day. During the week I usually don’t have much time to make breakfast, so I have granola and a little bit of Greek yogurt. But on the weekend, well the weekend I jam pack it with awesomeness.
