Roasted Grapefruit – A Clean Snack

I just finished my Revolt workout and damn….my lower body is just mush! But a fantastic mush! haha. It feels so great to have my workout complete before the hubby even gets home and dinner is already prepped (meal preps on Sunday) so I have SOO much spare time. It’s the oddest feeling. I feel so much less stress now with all my meals being prepped on Sunday. My weeknights are much easier to handle with my schedule. Before, I wouldn’t actually sit down and relax till 8-9pm at night. That is a long time since I start my day at 6:30am. By the time the weekend came I was exhausted.

One thing I cannot get enough of right now is grapefruits. I love them with just a little bit of stevia, freshly squeezed in a cocktail(hint hint hint), in a salad, with some fish or as a great desert! I would consider this a desert, a very non-guilty desert and with one modification can be for all my vegans out there!

Ingredients: Yields 1-2 servings

  • 1 Grapefruit, sliced in half
  • 1T of raw honey (or for my vegan loves, agave nector)
  • Dash of cinnamon
Directions: Preheat oven to 375c, spread honey evenly on both halves of the grapefruit and sprinkle cinnamon on. Place in oven and roast for 20-25min.
And that’s IT! I am addicted to this. It hits my desert craving every night!!
If this wasn’t enough, i’ve started obsessing over other roasted fruits….it has started as a thing!!

Kale the story -{a beautiful cheezy kale chip recipe}

Awhile back I heard about this dark green leafy wonder called kale. I always enjoy trying new vegetables, especially ones with through the roof health benefits. Kale is rich in calcium, vitamin C, A, E and K, and tons of beta-carotene. Loaded with fiber, kale is a superior vegetable by any scale.

How could I not go right out and purchase some? I am not sure what I had expected it to taste like, but for some reason I thought it would be like spinach. It is a bit bitter and a tougher leaf. So the possibilities are endless. The first time I had it steamed, the second time I steamed it with lemon juice and sea salt-delish. Then with more research I found what the foodie blog world have been raging all about……..kale chips. Fireworks shot off in my head, life became clearer and my opinion of this wonder vegetable steamed rolled right to the top of my all time favorite vegetables.

Fast forward to last night another brainstorm in the kitchen and the results…this.

Cheezy Kale Chips

Ingredients:

  • 1 bunch of kale, washed, dried, stems removed and torn into medium sized pieces
  • 1C cashews(soaked in water for 1-2 hours)
  • 2 T + 1t of nutritional yeast
  • 2 T lemon juice
  • 2 T diced cilantro
  • 3 T diced red onion
  • 2 t kosher salt

Directions:Preheat dehydrator to 115c. Place all ingredients but kale in food processor and blend till smooth. Mix sauce with kale. I find using my hands is the best way to do this. Place kale on dehydrator trays. Dehydrate for 8-12hours till krispy. Enjoy

Oven method: Preheat oven at 350c. Bake for 8-10min. Keep oven door ajar. Watch the kale as it can darken quickly via oven method.

  Hey Everyone, sorry for no posts this past few days. I have been sick with the stomach flu. Today I did go into work and managed to eat breakfast and a decent lunch. Go me!!! It’s Wrinkled

Happy Good Friday Everyone!! I hope for those of you that are off today that you are having a wonderful day!! Earlier this week I got a phone call from my Bridal Dress Salon…and guess what? MY DRESS IS HERE!! I couldn’t believe it’s here already! When I ordered it at the end of January they told me it would be 6-8mths, which btw totally freaked me out as my wedding was in 8 mths!! Centrepiece Project……….Mock-up #1

This past weekend I started one of my many projects before my Wedding Day!! This is the stuff that I really enjoy about wedding planning. Yummy Frittata

Breakfast has to be my favorite meal of the day. I love it! It is also a very important meal of the day. Eating a proper breakfast will help with snacking and being hungry later in the day. During the week I usually don’t have much time to make breakfast, so I have granola and a little bit of Greek yogurt. But on the weekend, well the weekend I jam pack it with awesomeness.
