No-Mayo Egg Salad Sandwich

January 29, 2013

I know it is Tuesday and what is below isn’t vegan. But I leave tomorrow and wanted to share this recipe with you before I go! It is honestly one of my favorite sandwiches. In fact I am eating it for lunch now! It is a fantastic healthy, high protein meal and tastes fantastic. *note to self, look in thesaurus for alternative adjectives* For now, fantastic will have to do! Ingredients: Yields 4 sandwiches 6 large eggs 1-2T Greek yogurt Salt and Pepper Squeeze of lemon juice pinch of smoked paprika 2 stalks celery, washed and chopped 2 green onions, chopped handful of lettuce 8 slices of whole grain bread, […]

Mini Egg White Frittata

January 27, 2013

Sorry for the lateness in this post! I was having issues with my Lightroom application, but it’s all fixed now! Breakfast is my favorite meal of the day. That being said, during the week I usually will have either a breakfast cookie, toast with PB or overnight oats in a jar. I am not a morning person, I wish I was, but I’m not. On the weekends however, I tend to make a very big breakfast. But sometimes breakfast turns into brunch(remember not a morning person) and I need to make a mixture of things and these little mini egg white frittatas are just that! Ingredients: Yields 12 1 cup egg whites( […]

Back in the kitchen – Thai Curried Butternut Squash Soup

November 20, 2012

Thank you everyone that sent me emails and comments about some personal matters that have recently struck us at home . My health is 100%, but my husband has been recently experiencing some things. We have done all the doctor appointments and making sure he is also 100%. We are unsure of the outcome, but we are staying positive. That being said, I am ready to come back. I have missed blogging sooo much. But did not feel very creative in the kitchen. When all this had started, my husband was going in for a very common, very basic surgery. I knew he wasn’t going to feel well for a […]

Banana Chocolate Marble Loaf

September 20, 2012

I know I know two desert recipes in one week might be a overload. But I had some ripe bananas and was craving chocolate. Why not create a marble loaf and call it bliss. This recipe is vegan and extremely moist. I often use that when describing my cake type deserts, but it is important. I find people have this strange notion that vegan deserts might be dry as they don’t have eggs or milk. Which is the absolutely incorrect. Ingredients: 3 very ripe bananas, mashed 2/3 cup of granulated sugar 1 t vanilla extract 2 T canola oil 1/3 c almond milk 1 c all-purpose flour 1/2 c whole […]

Healthy Oatmeal Raisin Cookies

September 18, 2012

How about we call this last Tuesday? This post is late, a week late. I have been studying for a work certification, football has returned AND I am trying to get in as much running as I can for my upcoming 5k. Life has been busy. But things are slowing down and I am spending my Sundays in the kitchen cooking up things for the blog again! If you recall, every Tuesday Courtney and I will be doing Vegan Tuesdays and this is my VERY first one. George is obsessed with oatmeal raisin cookies. It is his number one requested cookie of any. And he didn’t let me get away […]

Spinach Basil Spaghetti

August 29, 2012

One of the first things I cooked for myself when I moved out was spaghetti. The sauce came from a can, the spaghetti was white and I think I even threw in a can of sliced mushrooms. Aw the good old days. When George and I moved in together this was also the first thing I cooked for him. And because I was so nervous…I burnt the pasta. What a fail? George often asks for it, and over the years I have adapted and moved away from the can of sauce, the white spaghetti noodles and canned mushrooms. I also would like to believe the noodle burning is in the […]
