Banana Chocolate Marble Loaf

September 20, 2012

I know I know two desert recipes in one week might be a overload. But I had some ripe bananas and was craving chocolate. Why not create a marble loaf and call it bliss. This recipe is vegan and extremely moist. I often use that when describing my cake type deserts, but it is important. I find people have this strange notion that vegan deserts might be dry as they don’t have eggs or milk. Which is the absolutely incorrect. Ingredients: 3 very ripe bananas, mashed 2/3 cup of granulated sugar 1 t vanilla extract 2 T canola oil 1/3 c almond milk 1 c all-purpose flour 1/2 c whole […]

Healthy Oatmeal Raisin Cookies

September 18, 2012

How about we call this last Tuesday? This post is late, a week late. I have been studying for a work certification, football has returned AND I am trying to get in as much running as I can for my upcoming 5k. Life has been busy. But things are slowing down and I am spending my Sundays in the kitchen cooking up things for the blog again! If you recall, every Tuesday Courtney and I will be doing Vegan Tuesdays and this is my VERY first one. George is obsessed with oatmeal raisin cookies. It is his number one requested cookie of any. And he didn’t let me get away […]

Spinach Basil Spaghetti

August 29, 2012

One of the first things I cooked for myself when I moved out was spaghetti. The sauce came from a can, the spaghetti was white and I think I even threw in a can of sliced mushrooms. Aw the good old days. When George and I moved in together this was also the first thing I cooked for him. And because I was so nervous…I burnt the pasta. What a fail? George often asks for it, and over the years I have adapted and moved away from the can of sauce, the white spaghetti noodles and canned mushrooms. I also would like to believe the noodle burning is in the […]

In a need to stop the boring placemats birthday, I decided to make her a tropical birthday. She had leis, glow sticks, bonfire, mojito’s and……..Piña Colada Cupcakes! Now this recipe wasn’t something new to me, I had created these last December for my best friends birthday and always meant to share them with you…but I wanted to wait till I could display them in all their glory! This recipe is a party in your mouth and the accessories that can be added is too […]

Maple Tamari Grilled Tofu with Peach Salsa

August 18, 2012

Hope all of you enjoyed my crazy cat lady moment. It is something that can be used against me if anyone needs proof of insanity 🙂 Here is the promised recipe that would have been posted thursday had I not jumped off the deep end. This will actually be two lovely recipes, but when put together they are like peanut butter and jelly. I think I have used that analogy before. But I love PB&J! You will want to start this recipe the night before or earlier in the day. That way the tofu soaks in all the flavors. And the peach salsa has time to party 🙂 Also another […]

Red Cabbage Slaw

July 23, 2012

Is it just me? No matter how much sleep you get, how calm or even how busy work is, when you come home on Monday’s you are zonked? That is me today, and I am thanking smart Destini yesterday for prepping and getting my dinner ready last night. Tonight we had Epicures Pulled Pork recipe, but I use chicken instead of the suggested pork. Got that ready in the slow cooker and then went right into this colourful light red cabbage slaw! Due to everything I stated above, this post will be short, sweet and right to the point! This will be great for any potluck or BBQ. Ingredients: Yields: 12 […]
